Quick and Easy Minimalist No-Rise Doughnuts



For those Chanuka nights, when you want to make doughnuts without the wait, this minimalist no-rise recipe is your answer. With a handful of ingredients and simple steps, you'll have delicious doughnuts ready to enjoy in no time. These doughnuts are actually more simular to Zeppoles, which are Italian, and Morrocan dougnuts called Sfenj.


Ingredients:

  • 2 eggs

  • 1/4 cup sugar

  • 1/2 tsp cinnamon

  • Lemon zest or a few squeezes of lemon

  • 3/4 cup milk

  • 4 tbsp oil

  • 2 1/2 cups flour

  • 1 tbsp baking powder

Note: The batter will be a bit sticky.


Instructions:

Mix the Wet Ingredients:

  • In a bowl, whisk together 2 eggs, 1/4 cup sugar, 1/2 tsp cinnamon, lemon zest (or a few squeezes of lemon), 3/4 cup milk, and 4 tbsp oil.


Combine Dry Ingredients:

  • In a separate bowl, mix 2 1/2 cups flour and 1 tbsp baking powder.


Create the Batter:

  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. The batter will be a bit sticky – that's perfectly normal.


Fry the Doughnuts:

  • Heat oil in a pan or deep fryer.

  • Using a spoon, drop spoonfuls of batter into the heated oil.

  • These doughnuts are small in size


Cook Until Golden:

  • Fry the doughnuts until they turn golden brown on both sides.


Drain and Enjoy:

  • Once cooked, transfer the doughnuts to a paper towel to absorb any excess oil.


Toppings:

  • Dust with powdered sugar, when cooled.
