I'd love to give credit for this recipe, but I've made it so many times over the years that I can't even remember where it originated from! It's an easy, moist honey cake that I'm sure you'll love.
You can also lower the sugar or even omit it entirely if you prefer, (which I do) since the honey provides plenty of sweetness.
Also, you could substitute flour instead of regular flour.
Ingredients:
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon nutmeg
1/4 cup white sugar (optional)
1/2 cup brown sugar (optional)
2 eggs
1/2 cup oil
3/4 cup honey
1 cup strong coffee, cooled
Instructions:
Preheat the oven to 375°F.
In a bowl, mix the flour, baking soda, baking powder, cinnamon, and nutmeg.
In another bowl, whisk/ beat together the sugars, eggs, oil, and honey.
Gradually alternate adding the coffee and dry ingredients into the sugar mixture, then beat for five minutes.
Pour the batter into greased loaf pans (or a bundt pan – it works great in either!).
Bake for about 45–50 minutes, or until a toothpick inserted into the center comes out clean.
