10 MINUTE DINNER SERIES: CHICKEN AND RICE



In the hustle and bustle of daily life, finding time to prepare a wholesome dinner can often seem like a daunting task. However, with a bit of planning and a handful of simple ingredients, you can whip up a delicious and satisfying meal in just 10 minutes. Building on the principles of minimalist meal planning discussed in my AMI WHISK article, I present to you one of my 5 "super quick" chicken dinners that is not only time-efficient but also incredibly flavorful.

Preparation:

To ensure a seamless cooking experience, it's crucial to think about dinner the night before. Begin by making sure you have the necessary proteins defrosted or readily available in your home. A helpful tip, that I try to do, is to set up dinner first thing in the morning, freeing me from the stress of meal preparation for the rest of the day. As a bonus, like my home, yours will be filled with the enticing aroma of a delicious meal all day.


Recipe:


  • In a large pot, drizzle some olive oil and add one cup of rinsed rice.

  • Rinse six chicken thighs and place on top of the rice.

  • In a jar, combine 3 cups of water with paprika, salt, garlic powder, onion powder, black pepper, and either fresh or minced dried onion. Cover the jar, shake well, and pour the mixture over the chicken and rice.

  • Optionally, cut up an onion into strips and place it on top of the chicken for an extra burst of flavor.

  • Keep an eye on the rice, as you may need to add water,

  • feel free to adjust the recipe with more chicken and rice- you'll need more water too.

  • Let the chicken cook for about an hour, allowing the flavors to meld and the dish to reach its full potential.

Serve:

Pair this delectable chicken and rice dish with a refreshing salad or a side of cut-up vegetables.
