I saw this delightful Cinnamon Bun's recipe on my cousin's Instagram page, @Pass.the.Sugar. Known for her easy and fun recipes, I was confident that this one would be as good as she claimed. And yes, it is delish!
I ended up tweaking it even more than she tweaked the original- and I included the variations below.
Ingredients:
For the Dough:
1 cup warm milk (or nondairy milk like almond milk)
2 tablespoons sugar or maple syrup
2 tablespoons flour
3 teaspoons dry yeast
1/4 cup oil or melted butter
1/2 teaspoon salt
2 teaspoons baking powder
2 3/4 cups flour (plus extra for kneading)
For the Filling:
1 cup brown sugar
1/4 teaspoon cinnamon
1/2 cup butter
Instructions:
Activate the Yeast:
In a bowl, combine warm milk, sugar (or maple syrup), 2 TB flour, and dry yeast. Allow it to sit for about five minutes until it becomes nice and bubbly.
Prepare the Dough:
2. To the activated yeast mixture, add oil (or melted butter), salt, baking powder, and 2 3/4 cups of flour. Mix until the dough is sticky but workable. If needed, add a bit more flour.
Knead the dough for about five minutes.
Let it Rise:
4. Cover the dough and let it rise in a warm place for about an hour.
Prepare the Filling:
5. While the dough is rising, mix together brown sugar, cinnamon, and butter. (Alternatively, once you've rolled out the dough, just spread butter on the dough, then sprinkle cinnamon and brown sugar on top.)
Assemble the Rolls:
6. After the dough has risen, roll it out into a rectangle on a floured surface and drop little teaspoons of the mixture throughout the dough- than smear onto the dough.
Roll the dough tightly into a log and cut it into equal-sized rolls.
Bake:
8. Place the rolls in a baking dish and let them rise for an additional 15-20 minutes.
Bake in a preheated oven at 375°F (190°C) for 20-25 minutes or until golden brown.
Enjoy:
10. Allow the rolls to cool slightly before serving. Optionally, drizzle with icing or glaze or make a cream cheese frosting for extra sweetness.
These Cinnamon Swirl Breakfast Rolls are a delightful treat for a cozy morning breakfast or brunch. Enjoy with a hot cup of coffee or tea!
