This is one of those recipes that’s almost too easy to be called a recipe—but you’ll be so glad you have it. These no-bake peanut butter balls are sweet, crunchy, and perfect straight out of the freezer. They’re made with pantry staples and come together in minutes. Bonus? No oven needed.
You can use cornflakes or Rice Krispies, depending on what you have in the house. I’ve made them both ways and they’re delicious either way! Cornflakes give it a denser crunch, while Rice Krispies make it lighter and a bit more airy. So go with your mood or your pantry.
Ingredients:
2 ¼ cups peanut butter (that’s about 18 oz)
2 cups confectioners’ sugar
2 tablespoons melted butter
(or use coconut oil or regular oil—whatever’s easiest for you)
1.5 to 2 cups crushed cornflakes or 2 to 3 Rice Krispies
Melted chocolate for drizzling (optional but highly recommended)
Instructions:
In a large bowl, mix together the peanut butter, confectioners’ sugar, and melted butter (or oil) until smooth and fully combined.
Add your cereal of choice. If using cornflakes, crush them lightly before adding. If using Rice Krispies, just pour them in as is.
Start with the smaller amount of cereal and mix well. Add more if the mixture still feels too sticky to roll. It should be firm enough to shape into balls.
Roll into small balls and place on a parchment-lined tray or little cupcake tins.
Freeze until firm (at least 30 minutes).
Once frozen, drizzle with melted chocolate and return to the freezer to set.
How to Store:
Keep them in a sealed container or freezer bag in the freezer. They’re perfect for a quick sweet snack any time of day!
Make it Yours:
Try adding a splash of vanilla, a pinch of salt, or even mini chocolate chips to the mix. This is a flexible recipe that always turns out great.
