As you may already know, I lead a home management course . At each series, I am always amazed anew at these incredible woman- who come together after a day filled with the demands of children, housework, and chores.
What better way to show my appreciation for these hardworking course participants than by sharing a batch of delicious and easy biscotti?
The addition of freshly baked goods only enhances the already fun and enjoyable learning experience.
The participants always inquire about my biscotti recipe, and today, I'm sharing the basic version with you. What makes this recipe awesome is its failproof nature, allowing for endless variations and experimentation.
The Failproof Biscotti Recipe:
Ingredients:
1/2 cup oil (try coconut oil for a healthier alternitive)
1 cup sugar
2 eggs (or try flax or chia eggs for an alternative)
1 teaspoon vanilla extract
2 cups flour (experiment with spelt, whole wheat, or even substitute some for cocoa for a chocolatey twist)
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chocolate chips
Nuts or any other mix-ins of your choice
Topping:
2 tablespoons sugar
1/2 teaspoon cinnamon (or get creative with your favorite spices)
1.Mix and Roll: Combine the oil, sugar, eggs, vanilla, flour, baking powder, and salt in a bowl with a spoon or your hands . Once the dough is well mixed, fold in the chocolate chips and any additional mix-ins you desire. Roll the dough into two logs.
2.Flatten and Customize: Flatten the logs according to your desired thickness. This is where you can get creative - add toppings - like the sugar and cinnamon or get creative with nuts, coconut, or even a sprinkle of your favorite sweet spices.
3.Bake: Preheat your oven to 350°F (175°C). Bake the logs for around 30 minutes. If you like your biscotti crunchy, slice them halfway through the baking time and return them to the oven. For a softer texture, remove them after 25 minutes and slice immediately.
